mmmm...pumpkin

I get so jazzed about cooking and baking this time of year. It feels so good to be engulfed in the spicy smells of a fall kitchen. I am currently, brewing some chai tea to make into lattes later. The smell has infused the entire house.
I made some pumpkin chocolate chip cookies last night...
here's the recipe...
1 cup butter
1 cup sugar
1 eggs
1 tsp vanilla extract
1 tablespoon molasses
1 cup pumpkin puree
2 cups all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ginger
1/4 tsp allspice
1/4 tsp nutmeg
1/4 tsp ground clove
1 cup semisweet chocolate chips
DIRECTIONS:
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter and sugar until smooth. Beat in the egg. Stir in the vanilla, molasses and pumpkin until well blended. Combine the flour, baking soda, baking powder, salt and spices; stir into the pumpkin mixture. Mix in the chocolate chips. Drop by teaspoonfuls onto the prepared cookie sheets.
Bake for 8-10 minutes in the preheated oven, until edges begin to brown. Allow to cool for a few minutes on the baking sheets before removing to wire racks to cool completely.

they taste great but are a bit stiff.
i neary died at the amount of molasses that goes in there.
